A great way to use up all that leftover turkey meat is to make a pot pie. It doesn’t matter whether you’ve roasted your turkey or if you’ve got leftover smoked turkey it will all work. However, having smoked turkey ends up giving this pot pie a really great flavor. This is a really great turkey pot pie recipe that you and your family will love. It is such a simple way to use up all that leftover turkey. This specific recipe will make two 9 inch turkey pot pies.
Leftover Turkey Pot Pie
4 cups Turkey meat, cubed 2 cups peas & carrots, frozen 2 cups green beans, frozen 1 cup celery, sliced 2/3 cup onion, chopped 1 ¾ cup chicken broth 1 1/3 cup milk 2/3 cup butter 2/3 cup all-purpose flour 1 tsp salt 1 tsp ground black pepper ½ tsp celery seed ½ tsp onion powder ½ tsp Italian seasoning 4 unbaked pie crusts, 9 inchPreheat your oven to 425F.
Using a saucepan add the peas & carrots, celery, and green beans. Cover with water. Bring to a boil, then reduce the temperature to medium-low and simmer until the celery is tender. Once this is done, drain the vegetables and set aside.
Using another saucepan melt the butter over medium heat. Add the onion and cook until translucent. This will take about 5 minutes. Once that is done, add in the flour, salt, black pepper, celery seed, onion powder, and Italian seasoning. Slowly mix in the broth and milk until it starts to thicken. Once it has thickened, remove from the heat and stir in the vegetables and roasted or smoked turkey until it is mixed well.
Add two of the pie crusts into two 9 inch pie dishes. Add half of the mixture into each pie crust. Top both pies with another pie crust. Pinch the edges of each pie crust together to seal. Make several small slits into the tops of each pot pie.
Place in the oven and bake until the crusts are golden brown of the filling is bubbling. This will be approximately 30 minutes. If the tops of the pie crust are browning too quickly you can add a piece of aluminum foil over them for the last 15 minutes. Allow to cool for 10 minutes prior to serving.
