Today we are going to show you how to make Grilled Rosemary Onion Potatoes.
I love to do potatoes on the grill, they are one of my favorite grilled vegetables. The cook up so nicely and they go great with any grilled meal.
These ones are especially tasty as they have onion and herbs.

Grilled Rosemary Onion Potatoes
6 medium baking potatoes, cut into 3/4 inch pieces
1 medium onion, finely chopped
3 tbsp olive oil
1 tbsp dried rosemary leaves
1 1/2 tsp chopped thyme
1/2 tsp salt
1/8 tsp pepper
In a large saucepan cook the potatoes in boiling water for 5 – 10 minutes until tender. Drain and set aside.
Set up your gas or charcoal grill for medium heat.
Using a large bowl combine the onion, olive oil, rosemary, thyme, salt and pepper. Add in the potatoes and toss to coat them evenly.
Pour this mixture onto a large sheet of aluminum foil. Fold up the aluminum foil to form a packet, and place on the grill. Grill for approximately 10 – 15 minutes.
Serve immediately.
