Today we are going to show you how to make Grilled Potato Salad.
Potato salad is a must have side dish for any cookout, and this particular one is unique as it uses grilled potatoes.
What also makes this grilled potato salad really good is the blue cheese vinaigrette. It really makes for a flavorful side dish.

Grilled Potato Salad
3 lbs red potatoes
1/4 cup sherry vinegar
1 small shallot, finely chopped
2 tsp Dijon mustard
1/2 cup blue cheese, crumbled
1/3 cup olive oil
3 tbsp extra-virgin olive oil
14 oz. watercress, coarsely chopped
2 green onions, thinly sliced
Kosher salt
Pepper
Using a large pot add the potatoes and cover with cold water. Add 2 tbsp salt and heat to boiling. Boil for approximately 20 minutes or until the potatoes are cooked through, but aren’t too soft. Drain and set aside.
Using a mixing bowl whisk together the sherry vinegar, shallot, Dijon mustard,blue cheese, and the olive oil. Cover and refrigerate.
Set up your gas or charcoal grill for direct grilling over high heat.
Slice the potatoes into 1/4 inch slices. Brush with some olive oil and season with some salt and pepper.
Place the potatoes on the grill. Grill for approximately 5 – 10 minutes turning once half way through. The potatoes should be browned on both sides.
Place the watercress on a serving platter. Top with the grilled potates and green onions. Top with the bue cheese vinaigrette. Serve immediately.
