I’ve got a recipe for a tasty grilled treat for you today. How about grilled pineapple sundaes. Sounds delicious doesn’t it? They are good, and easy to make too. Most people probably don’t think about making a dessert on the grill, but the grill is perfect for making some really fantastic treats. And besides, if you already are making something else on the grill, you might as well use it to make some dessert too.
Grilled Pineapple Sundaes Recipe
Here is what you will need:
4 – Fresh Pineapple Slices – 1/2 inch slices
4 – Scoops Vanilla or Coconut Ice Cream
1 Cup – Whipped Topping
1/2 Cup – Hot Caramel Ice Cream Topping
1/4 Cup – Flaked Coconut – Toasted
Set up your gas or charcoal grill for direct grilling over medium-high heat.
While your grill is heating up, slice up your fresh pineapple. Sure you probably could get away with using canned pineapple rings, but they won’t be as firm and flavorful. So, go with fresh, it is worth it. Cut your pineapple into rings or half rings; it is easier to grill that way. If you want to chunk it up, you can do that too, but you will need a grill pan, otherwise the pineapple might fall through the grates.
Put the pineapple slices on the grill over the heat. Grill for about 2 to 3 minutes flipping the slices half way through grilling. A pair of long tongs comes in handy for this. You should have a nice char on each side. The grill will give it that nice caramelized flavor.
Once the pineapple is heated through, place the slices on 4 separate plates. Top with your vanilla or coconut ice cream, then the whipped topping. Then drizzle with the warm caramel ice cream topping. I use a basting set to warm up the caramel topping. Finally sprinkle with the flaked coconut, and serve. You can toast the flaked coconut if you like too. I think it gives it a better flavor, so just put the coconut flakes in a saute pan and toast them until they get a bit light brown.
