One of my all-time favorite vegetables to grill are pepper, and especially sweet peppers. Peppers get that sweet, smoky, charred flavor when you grill them; it is so good. Peppers are pretty simple to grill too, plus you can do all kinds of things with them, like stuffing them with various ingredients like we are doing today. So, let’s get on to the recipe.
Cream Cheese Stuffed Mini Sweet Peppers Recipe
Here is what you will need:
8 Mini Sweet Peppers
6 oz. Cream Cheese, softened
1 Tbsp Fresh Herbs, chopped fine – Use your favorites such as Chives, Thyme, Oregano, Basil, Tarragon
2 Garlic Cloves, minced
Salt & Pepper, To Taste
1 Tbsp Olive Oil
1/2 Cup Shredded Parmesan Cheese
Set up your gas or charcoal grill for direct grilling over medium-low heat. While you grill is heating up, let’s get everything prepped.
Clean you sweet peppers and slice them in half length-wise. Remove the seeds and membranes. In a small bowl combine the softened cream cheese, herbs, garlic, salt and pepper. Fill each half of the peppers with this cream cheese mixture, then sprinkle with some of the Parmesan cheese.
If you don’t already have one, you definitely want to invest in a vegetable grill pan. These peppers are small, and it is much easier to grill them when using a grill pan. Here is the grill pan I suggest checking out. They come in handy for all kinds of grilling.
So, once you have your grill pan, brush on a bit of the olive oil. Place the mini sweet peppers into the pan and place it on the grill right over the heat. Cover and grill for approximately 30 to 40 minutes. The bottoms of the peppers will have a nice char at this point.
Remove from the grill and serve. These make for a great little appetizer.
