Simple is the name of the game when it comes to making steak. For the best grilled ribeye steak, you do not need a whole lot expect for a couple spices, and some grill heat. These steaks turn out absolutely perfect, so check out how easy it is.
Here is what you will need:
Ribeye Steaks – thick-cut
Olive Oil
Kosher Salt
Black Pepper
Smoking Wood – optional

First off, brush a bit of extra virgin olive oil on both sides of your ribeyes with a basting brush. Sprinkle a bit of Kosher salt and freshly ground black pepper on both sides as well. Sure, you can use whatever seasoning you like, but I find that a really good steak only needs a bit of salt and pepper.
Once your grill is heated up, optionally at this point you can add a bit of smoking wood, such as hickory. If you have gas grill you can use one of these smoker boxes. I normally don’t add smoke to my steaks, but some like a bit added.
So, once you have that all set, put your ribeye steaks on the grill right over the heat source. The steaks are not going to take long depending upon the thickness. An inch thick ribeye will need approximately 5 minutes per side for medium-rare.
If you like the nice grill marks on your steak, rotate them a bit after the first couple of minutes. Once 5 minutes have past, flip the steak with a pair of long tongs, and grill for another 5 minutes. If you want the grill marks, again rotate it after a couple of minutes. Depending upon how you like your steaks done, these aren’t going to take long. I prefer medium-rare, so the internal temperature should be between 130-135F, when take with an instant read thermometer like this one. Adjust the grill time to hit your targeted doneness level.
Once they are done, remove them from the grill and let them rest for about 5 minutes. It is quick and easy to make some of the best grilled ribeye steaks you will ever eat. Enjoy!
