Using your favorite BBQ sauce and a basting brush, brush a bit of sauce under the skin of each of the thighs. In the video they use an injector to get the barbecue sauce under the skin. Here is a good, heavy-duty injector. Coat each of the thighs with some olive oil, and sprinkle on your favorite chicken seasoning or rub.
With the thighs all sauced, and your grill heated up, place the thighs right over the heat source. We will be grilling indirect, but first we want to sear both sides of the thighs. We are going to sear them on both sides for about a minute or two. You will want to use a pair of long tongs like these, because your grill will probably flair up while your grilling direct. Basically you want to just brown them on both sides; flip them with they are lightly seared.
Once they are seared on both sides move them to the indirect part of the grill. At this point you can add some smoking wood such as apple or hickory if you prefer. Continue grilling for about another half hour to 45 minutes. After about 20 minutes or so, using your basting brush, coat the thighs with some BBQ sauce. A basting set is handy for this. Flip the thighs and baste the other side with some BBQ sauce as well.
Continue to grill for about another 20 minutes or so. Check the internal temperature with an instant read thermometer like the one I use. The internal temperature should be 165F when they are done. Once done, remove from the grill.
See how simple it is to make some of the best grilled BBQ chicken thighs. These thighs turn out moist and flavorful; you are going to love them. Enjoy!
