Here is a simple recipe for Cajun injector sauce. This sauce is great for chicken and turkey, but also feel free to experiment with other meats. I use this for my Cajun Smoked Turkey.
Cajun Injector Sauce
½ cup chicken broth
3 tbsp butter
2 tsp lemon juice
1 tsp Cajun Rub
Kosher salt
Using a small saucepan combine the chicken broth, butter, lemon juice, and Cajun rub over medium heat. Heat until the butter melts. You can find Cajun rub in some stores, but I really suggest you make it yourself. Here is a simple recipe: Cajun Rub.
Taste the injector sauce and add Kosher salt as needed. Let the sauce cool to room temperature or just a bit warmer so the butter is still liquid. It is now ready to be loaded into your kitchen injector.
