Pork Shoulder
The pork shoulder comes from the upper front leg of a hog and most of the time it is divided into two parts. The top of the leg is known as a pork butt or Boston butt. The lower part of the shoulder is called a picnic or picnic shoulder. When this part is cured it is called a picnic ham.
Sometimes at your supermarket you will find them called pork shoulder roasts or blade roasts. This is just the top of the shoulder and they can come with or with bone.
Pork shoulder is great cooked on a grill or smoker. You will see it often used for pulled pork.
