The hanger steak is a flavorful cut of beef that is cut from the plate section of the beef cattle. It is a lot like a flank steak in its appearance and flavor. It is a really tender cut and is great marinated and grill quickly over high heat. The diaphragm muscle on the steer is cut into two different cuts of meat, the hanger steak which is considered more flavorful and tender, and the other is the skirt steak which contains tougher muscles.
There is only one hanger steak in each animal, and it weighs just around 2 pounds. The one thing to note is that there is a tough tendon running down the center of this steak that you will want to remove before grilling.
