Prime rib is also known as a standing rib roast, it is a cut of beef from the primal rib and could contain from two to seven ribs. It is often times called a standing rib roast because you would “stand†it on the rib bones so the meat doesn’t touch the pan or grill while cooking.
Some people wrongly assumed that this is a USDA Prime cut because of the name, but the name just comes from it being cut from the primal rib. Prime rib is usually prepared by rubbing it with salt and other seasonings and slow roasting or grilling it.
