What is the difference between Fatback vs. Salt Pork?
Like is sounds fatback is fat from the back of a pig. It is a hard fat that can be ground up and chopped. It is used as an ingredient when making sausages because it will add juiciness and flavor. It is a solid fat even at room temperature, but if you chill it for awhile it will grind easier.
It is perfect for adding to any meat that could use a bit more flavor or fat, such as sausages, or lean burgers.
Sometimes it is referred to as salt pork, but salt pork is actually cured and salted to prolong its shelf life.
