So, what is a Strip Steak? A strip steak is a cut of beef that comes from the short loin section of beef cattle. It is a really tender cut of meat because it is made up of muscle that does only a little work. It is not as tender as your tenderloin or rib eye steak however. The strip steak has quite a bit of fat in it, but not as much as you’d find with a ribeye steak.
Besides being called a strip steak it can also be known as a New York Strip, Ambassador Steak, Kansas City Steak, Hotel-Style Steak, or Boneless Club Steak. It is a great substitute for recipes calling for a T-bone or porterhouse steak. The reason for this is when the strip steak is still attached to the bone with a bit of tenderloin it becomes a T-bone steak or porterhouse steak. The difference is that a Porterhouse will have a larger portion of the tenderloin included.
