Skirt Steak
A skirt steak is a lot like a flank steak as it is cut from the chest area of the cattle, and it is coarsely grained. The section on the cattle it is cut from is the Plate. It is a long, flat cut of meat that isn’t very tender, but it tastes really good. There are inner and outer skirt steaks and both are boneless. It is covered with a tough membrane that you will want to remove before grilling. Since this is a tougher cut of meat, it is best to marinate it. It’s a really good cut of meat to use in fajitas or stir fry.
