Pork Butt
The pork butt is a cut of pork that comes from the upper shoulder area on the front leg of the hog. This cut will a lot of the time contain the blade bone. Often times you will see this cut called a Boston butt and at some supermarkets it will be labeled as a pork shoulder.
The pork butt is a great cut of pork for grilling and smoking, you will often see it used for pulled pork. Many people are surprised that the pork butt comes from the shoulder and not the rear since it is called a butt. It gets the name butt from the wooden barrels some cuts of pork were packed in during pre-revolutionary times into the Revolutionary War.
