Picnic Shoulder Roast
The Picnic shoulder is a cut of pork from the shoulder of the hog. It comes from the upper front leg of the hog. The shoulder is divided into two sections, the top section is the pork butt or Boston but, and the lower part is the picnic or picnic shoulder.
If you were to cure the picnic shoulder it would be considered a picnic ham. Some folks like to use the picnic shoulder to make pulled pork, and it works just fine for that, but a Boston butt is much better for that. The picnic is good cooked whole and sliced.
While you can shred a picnic shoulder for pulled pork, I like it grilled whole and sliced. If you are going to slice a picnic shoulder roast you need a good carving knife. Here is the one I use.
