Chuck Steak
Chuck steak is a cut of beef from the chuck area of beef cattle. It is usually about 1 inch thick and rectangular and it contains parts of the shoulder bones. Sometimes you will see it referred to as a 7 bone steak because the bone like it is in the shape of a number 7.
These steaks contain a lot of connective tissue, so it is a cut of meat that is best for stews, pot roasting, braising, or slow cooking. It is also decent for grilling or broiling. The thicker version of this steak is called a chuck roast or 7 bone roast, and is usually used for pot roasts.
It is a cheaper cut of meat, and is often used for ground beef because it has a lot of flavor and a good ratio of meat to fat.
