Boston Butt
The Boston butt, also known as a pork butt is a cut of pork that comes from the upper shoulder of the hog on the front leg. This cut of pork is often used for pulled pork, so it is wonderful grilled and smoked.
It gets the butt portion of its name from the wooden barrels that some pork was shipped in during pre-revolutionary times up and into the American Revolutionary War. It gets the Boston part of the name for the way the hog shoulder was cut in Boston.
