7-Bone Steak
The 7-bone steak is from the chuck section of beef cattle. It gets its name from the 7 shaped cross section of bone that runs through it. Sometimes you will see it called a chuck steak. This is a pretty tough cut of meat to work with. It is best if it is braised or slow cooked in liquid.
Fast grilling really is not a good idea, so will want to do it slow and low. Smoking it is a good option because you will be cooking at a low temp for several hours. This is especially true if you get the thicker 7-bone roast.
