Today we are going to show you how to make Stuffed Grilled Chicken Breasts.
These chicken breast are stuffed with sausage, bacon, mushrooms, and all kinds of other goodness. They turn out so good.
I really love stuffed chicken breasts, and they are even better when done on the grill.

Stuffed Grilled Chicken Breast
6 split chicken breasts
1/2 lb Italian sausage
3 cloves garlic, minced
4 strips hickory or maple flavored bacon, chopped
1/4 lbs fresh mushrooms, finely chopped
2 tbsp butter
1 tbsp fresh parsley, minced
1/4 tsp paprika
1/2 cup bread crumbs
1/8 tsp onion powder
1/8 tsp garlic powder
1 cup sherry
6 bacon strips
Olive oil
salt and pepper, to taste
toothpicks or butcher’s string
Using a saute pan add about 1/2 tbsp of olive oil and heat over medium heat. Add the sausage and the garlic. Once the sausage starts to brown add in the chopped bacon.
Fry until the sausage has browned and the bacon is crisp.
Using another saute pan add in the butter and chopped mushrooms. Saute over medium heat. Add in the bread crumbs and parsley. Also add in the salt, pepper, paprika, onion powder, and garlic powder. Mix together well.
Pour in the sherry to this mushroom mixture. Remove from the heat and add in the sausage mixture.
Setup your gas or charcoal grill for indirect grilling over medium-high heat .
Take your chicken breasts and pound them with a meat mallet to flatten them. Spread the stuffing mixture on each of the chicken breasts. Roll the chicken breasts so the stuffing is inside.
Wrap each of the chicken breasts with a strip of bacon and secure with a toothpick or butcher’s string.
Lightly rub the chicken with a bit of olive oil and season wit with a bit of garlic powder, paprika, and black pepper.
Place the chicken breasts on the side opposite of the heat source. Grill the chicken breasts for approximately 30 minutes turning once half way through. Baste with a bit of olive oil throughout grilling.
The chicken is done when it is pierced and the juices run clear.
