Today we are going to show you how to make Spicy Mustard Grilled Chicken.
With this recipe we grill up some marinated chicken, onions, and green peppers on skewers. It is a really simple marinade mixture that adds a lot of flavor.
This is a perfect weeknight grilled meal.

Spicy Mustard Grilled Chicken
4 chicken breasts, boneless, skinless
1/4 cup lemon juice
2 tbsp olive oil
2 tbsp spicy mustard
1/2 tsp oregano leaves
1/4 tsp salt
4 medium onions, cut into halves
1 green pepper, cut into 1 inch pieces
Skewers
In a mixing bowl combine the lemon juice, olive oil, mustard, oregano and salt. Cut the chicken breasts into 1 inch pieces and add to this mixture. Stir well to coat. Put in refrigerator for at least 2 hours.
Set up your gas or charcoal grill for medium-high heat.
Using skewers, thread on the chicken, onions, and green peppers.
Place the skewers on the grill and brush with a bit of the marinade. Cook for approximately 15 minutes, turning and basting occasionally.
Remove from the grill and serve.
Now you don’t have to always skewer the chicken and veggies, I sometimes just grill the chicken breasts whole along with the vegetables. I highly recommend that you get yourself some stainless steel skewers. The nice thing about them is that they are heavy-duty, easy to clean, and you can use them over and over again, unlike bamboo skewers. Here are the ones I use.
