Southwestern Burgers
1 1/2 lbs ground beef
1/2 onion, coarsely chopped
2 Garlic cloves, finely minced
1/2 tsp ground cumin
2 tbsp chile powder
1/2 cup brewed coffee
1/3 cup ketchup
1 pinch salt
1 pinch black pepper
1 tbsp olive oil
1/4 cup green olives, coarsely chopped
1 tbsp Dijon mustard
4 whole whole wheat hamburger buns, halved
4 slices Monterrey jack cheese (optional)
First we are going to make Red Chile Ketchup: In a small sauce pan, heat the olive oil until hot. Add the onion and garlic and cook over medium heat until the onion is translucent. Add in the cumin and chile powder. Stir continuously to make a paste. Add the coffee and stir until smooth. Stir in the ketchup. Reduce the heat to low and simmer the mixture for 2 to 3 minutes.
Pour the mixture into a blender or food processor, and process until smooth. Season to taste with salt and pepper. Set aside. The red chile ketchup can be used ware or chilled.
Setup your gas or charcoal grill for medium-high heat.
In a mixing bowl combine the ground beef, olives, and Dijon mustard. Form into 4 patties.
Grill the burgers over the heat for approximately 5 minutes per side, or to your desired doneness.
Once the burgers are done, allow them to rest for a couple minutes. At this time lightly toast the hamburger buns.
Place the burgers on the toasted buns and top with the red chile ketchup. The red chile ketchup is great on fries too.
Servings: 4
