Smoked turkey necks and rice is some good old comfort food. It a flavorful dish that is really simple to make.
A lot of people just throw away turkey necks, but they have some great meat on them. You are going to need a dozen turkey necks for this recipe. No, you don’t need to go out and buy a dozen turkeys; you can usually speak to your butcher or go to your local grocery store and get a package of turkey necks. You can find them pre-smoked as well.

Smoked Turkey Necks and Rice Recipe
12 Smoked Turkey Necks
4 cups turkey stock
1 large onion, sliced
1 large green bell pepper, chopped
2 cups rice
Water
Salt and Pepper
Place the smoked turkey necks in a large stock pot. Cover with water. Add a bit of salt and pepper to taste and also the sliced onion. Simmer for around 1 ½ hours.
Remove the turkey necks and reserve 4 cups of the turkey stock. If there isn’t enough liquid left for 4 cups of stock add some chicken stock or some water.
Using a large casserole dish, dump in the rice and cover with the turkey stock. Add in the chopped bell pepper as well. Mix it well. Lay the smoked turkey necks on top.
Bake at 375F for approximately 1 hour.

This is a simple dish that is huge on flavor. If you can I really recommend that you smoke the turkey necks yourself, it adds in so much more flavor.
