There are a lot of different ways to make smoked turkey leg soup, from using lentils, and vegetable, to using beans or rice. The recipe that is my all time favorite for smoked turkey leg soup uses wild rice. I’m a huge fan of wild rice and smoked turkey, so this recipe is great.

This is a pretty simple smoked turkey leg soup recipe that you and your family will love.
Smoked Turkey Leg Soup
2 smoked turkey legs 8 cups water 4 chicken bouillon cubes 1 onion, quartered 2 celery stalks, chopped 1 cup baby carrots, sliced 2 garlic cloves, minced 2 bay leaves 1 tbsp garlic powder 1 tbsp onion powder 2 tsp black pepper 1 tsp dried thyme 1 tsp dried marjoram 1 tsp curry powder 1 cup uncooked wild rice 1 quart half-and-half
In a large stock pot place the turkey legs, water, bouillon cubes, onion, carrots, garlic, bay leaves, garlic powder, onion powder, black pepper, thyme, marjoram, and curry powder. Bring to a boil. Once it starts to boil, reduce the heat and simmer for 30 minutes.
Add in the wild rice. Simmer again for at least 1 hour. Remove the smoked turkey legs from the pot and strip the meat from the bones. Chop up the meat and add it back to the soup. Pour in the half-and-half. Cook on low heat for approximately 30 more minutes.
Serving: 6
