Today we are going to show you how to make Smoked Herb Chicken.
I absolutely love smoked chicken. It adds such a great smoky aroma and flavor to the chicken.
There are a lot of different types of wood you can use to add unique flavors. If this is your first attempt at smoking just try starting with a bit of hickory.

Smoked Herb Chicken
1 whole chicken, 4lbs
3 tbsp butter
1 tbsp fresh parsley, chopped
1 tbsp fresh oregano, chopped
1 tbsp fresh basil, chopped
1 tbsp fresh chives, chopped finely
Setup your gas or charcoal grill for indirect grilling on low heat. Soak some wood chips or chunks in a bucket of water. If you are using a gas grill, now is the time to make your smoker pouch.
Rinse of the chicken and pat dry. Take chucks of the butter and place it under the skin of the chicken around the breast area.
In a small mixing bowl, mix together the herbs. Place half of the herbs under the skin like you did with the butter, and the other half put inside the chicken.
Place the chicken on the grill on the opposite side of the heat source. Place the soaked wood chips or chunks directly on the coal, or if you are using a smoker pouch place that right over the heat source.
Smoke the chicken for approximately 4 hours or until the juices run clear. You may need to add more wood during this time if you like a more intense smokiness.
