Here is a quick and easy recipe for peanut sauce. I love to use this as a dipping sauce for veggies, shrimp, spring rolls, and chicken satay.
Simple Peanut Sauce
2 tsp peanut oil
1/3 cup yellow onion, diced
2 garlic cloves, minced
1/4 cup soy sauce
1 tbsp lime juice
1 tbsp lemon juice
1 dash Tabasco sauce
1 tsp ground coriander
1/2 tsp ground cumin
1 1/2 cups coconut milk
1 cup chunky peanut butter
Using a skillet heat up the peanut oil over medium-high heat. Add in the yellow onion and garlic. Saute the onion and garlic until the onions are translucent, which will be around 3 to 4 minutes. Add in the soy sauce, lemon and lime juice, Tabasco sauce, coriander, cumin, and coconut milk.
Bring the mixture to a boil while stirring constantly.
Reduce the heat to low and mix in the peanut butter. Stir until the mixture is blended well.
Pour into a little bowl and serve.
