I’m going to share with you my simple recipe for Basil Pesto. It doesn’t get much more simple than this recipe.
I like to make this one in the summer a lot because I get a ton of basil out of my garden, but you can find fresh basil all year round at your local grocery store.
Simple Basil Pesto
2 cups fresh basil
1/4 cup toasted pine nuts
2 garlic cloves, peeled
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/3 cup extra virgin olive oil
1/2 cup grated Parmesan
Using a blender or a food processor add in the basil, pine nuts, garlic, saltand pepper. Pulse until it is finely chopped.
With the blender or the food processor running gradually add the olive oil until it forms a thick but smooth consistency. Once that has happened transfer the mixture to a mixing bowl and add in the Parmesan cheese. Mix well.
Yield: 1 cup
At this point you will want to taste it to see if it needs a bit more salt and pepper. Cover and refrigerate.
See how simple this basil pesto is? It tastes really great too. I like to use it in pasta dishes, as spreads for sandwiches, paninis, and burgers. It has tons of uses.
