Today we are going to show you how to make Middle East Grilled Herb Chicken.
This is a very flavorful grilled chicken as we are using some fresh herbs. It is actually a simple herb mixture that is rubbed onto the chicken. The fresh herbs with the grilled chicken smells and tastes amazing.

Middle East Grilled Herb Chicken
1 3 pound chicken, butterflied
1/2 cup parsley, finely chopped
1/2 cup fresh fennel tops, finely chopped
1/2 cup green onions, finely chopped
1 8 ounce container plain nonfat yogurt
salt and pepper
1 tsp olive oil
In a bowl mix together the parsley, onion, fennel, yogurt, and salt and pepper.
After you have butterflied your chicken rinse it with cold water and pat it dry. Take the mixture of herbs and spread it on the meat of the chicken under the skin.
Make sure you spread the herb mixture well so the chicken is evenly coated. Place the chicken in a covered dish and refrigerate for at least 3 hours, but preferably overnight.
Set up your gas or charcoal grill for medium heat.
Lightly brush the chicken with the olive oil and place it on the grate skin side up.
Grill the chicken for approximately 45 minutes. If you like a crisper skin, flip the chicken halfway through grilling so it is skin side down.
Remove from the grill and serve.
