Today we are going to show you how to make Jalapeno Grilled Pork Loin.
I love spicy foods, and this recipe a good amount of zip if you like it spicy too.
This is a great pork recipe that rolls a jalapeno/tomato/cilantro mixture.

Jalapeno Grilled Pork Loin
1 3lb boneless pork loin roast
5 to 6 jalapeno peppers
2 garlic cloves, minced
1 plum tomato, peeled, seeded, and diced
1/4 cup lime juice
2 tbsp fresh cilantro, chopped
1 1/4 tsp salt
1/4 cup butter
Seed and chop 3 of the jalapeno peppers. In a mixing bowl combine the chopped jalapenos, garlic, tomato, lime juice, cilantro, and 1/4 tsp of salt.
Next butterfly the pork roast. To do this, make a lengthwise cut down the center of a flat side. Cut down to within a 1/2 inch of the bottom. Once you reach that point slice horizontally to 1/2 inch from the left side. Repeat this same cut towards the right side.
Open up the pork roast and place it between 2 sheets of plastic wrap. Using a meat mallet or rolling pin flatten to 1/2 inch thickness.
Spread the jalapeno pepper mixture over the roast. Roll it up and tie it with string every 1 inch. Place the roast in a greased baking dish and cover and refrigerate for 8 hours.
Seed and chop the remaining jalapeno peppers. Mix with the butter and 1 tsp of salt.
Set up your gas or charcoal grill for medium-high heat.
Place the pork on the grate and grill for approximately 40 minutes or until it reaches 160F in the thickest portion. Your are going to want to use an instant read thermometer like this one. This thing is great. Make sure to baste with butter and turn often while grilling.
