Today I’m going to show you how to make London broil on the grill. A lot of people think that London broil is a cut of meat, but it actually refers to a way of grilling and carving a steak. The steak used to make a London broil is typically a tough cut of meat, but they are very flavorful.
The typical steaks used for a London broil are the top round, bottom round, or a flank steak. The top and bottom round are a bit tough even when you slice it diagonally, so I usually use a flank steak. A London broil is all about the way you carve the steak. You carve it diagonally to make a tough steak tenderer.
Let’s get to making the London broil. First get yourself a steak. Like I said before you can use a top round, bottom round, or flank steak. You will want to get one that is around 1 ½ inches thick. I like to marinate mine, but you could also just use a rub. The marinade or rub doesn’t matter, use whatever one you prefer. You can find all kinds of premade rubs and marinades at your local grocery store.
I’m going to go simple with my marinade. I’m going to use about a half cup of olive oil, 4 cloves of garlic minced, and a half teaspoon each of black pepper and salt. I’m going to put the steak into a baking dish and spread that mixture over it. At this point you will want to cover it and refrigerate it for around 6 hours.
Set up your gas or charcoal grill for direct cooking over high heat. One your grill is ready place the steak on the grate. Grill for about 6 to 8 minutes per side, which will get you a medium-rare steak. If you like the crosshatch look on your steak, rotate it 90 degrees after about 3 minutes. Do that on both sides.
Once the steak is done transfer it to a cutting board. Let it rest for about 5 minutes. Using a good meat carving knife, hold the blade at a 45 degree angle to the top of the steak. Carve it into thin, broad slices. Serve immediately.
