Today I’m going to show you how to grill crosscut short ribs. Here in the U.S. we generally have our ribs cut lengthwise, but there is another way of cutting ribs that is becoming increasingly popular; that is crosscut. These cuts are long and thin, usually about ½ to 1 inch, cut crosswise from beef short ribs. You will sometimes see these referred to as rib steaks.
Since these cuts are gaining popularity and can usually find them at your local supermarket or butcher’s shop. Get yourself about 4 pounds of them, which should be enough to feed about 6 people. I like to keep things simple when I make crosscut short ribs, I just use some salt, hot pepper flakes, and oregano rubbed into these ribs.
Here is what you will need to grill crosscut short ribs:
4 lbs crosscut short ribs
1 1/2 tsp coarse salt
1 1/2 tsp black pepper
1 1/2 tsp dried oregano
1 1/2 tsp red pepper flakes
4 tbsp olive oil
3 garlic cloves, finely chopped
Place the rib steaks into a baking dish and sprinkle both sides with salt, pepper, oregano and red pepper flakes. Pat the seasonings into the meat. Drizzle a bit of the olive oil on both sides and sprinkle them with the garlic. Let them marinate covered in the refrigerator for up to 2 hours.
Set up your gas or charcoal grill for direct grilling over high heat. Once ready place the crosscut ribs on the grate and grill for about 4 to 6 minutes per side. Use a pair of long tongs like these to flip them only once. At this point they should be cooked to about medium.
Once they are done transfer them to a plate and serve. This is how to grill crosscut short ribs. It is a really easy meat to grill, and the different seasonings and marinades you could use are endless. Give them a try, they are really tasty.
