Herb Crusted Beef Tenderloin
1 beef tenderloin, 5lbs
6 tbsp olive oil
8 large garlic cloves, minced
2 tbsp fresh rosemary, minced
1 tbsp dried thyme leaves
2 tbsp cracked black pepper
1 tbsp salt
Setup your charcoal or gas grill for medium-high heat indirect grilling.
If it isn’t already tied, tie the roast every 2 inches with butcher’s twine. What this will do is help the tenderloin keep its shape.
In a mixing bowl, combine the oil, garlic, rosemary, thyme, pepper, and salt. Rub this mixture over the roast.
Place the roast directly over the heat source to sear. Approximately 5 minutes. Flip and sear on the other side for another 5 minutes.
Once the tenderloin is seared on both sides move it to the cool side of the grill. Cover and let grill for approximately 45 – 60 minutes. Let it rest for approximately 15 minutes before serving.
