Grilled Zucchini
1 large zucchini
4 tbsp butter
salt and pepper to taste
Setup your charcoal or gas grill for medium-high heat.
Slice the zucchini lengthwise into quarters. Season with salt and pepper, and spread a bit of butter on each quarter. Wrap all the quarters into a sheet of aluminum foil. Place the foil wrapped zucchini over the heat source and grill for approximately 10 – 15 minutes per side.
An alternate method for grilling the zucchini would be to skip the aluminum foil and place the seasoned and buttered zucchini directly on the grates. It will only take a few minutes to grill per side this way, so keep you eye them so they do not burn.
