Grilled Shrimp with Garlic Butter Sauce
2 lbs medium-size shrimp
1/2 cup butter
1/2 cup olive oil
3 cloves garlic, minced
3 tbsp minced parsley
3 tbsp lemon juice
1 tbsp barbecue sauce
Peel and devein the shrimp. Using two skewers slide on 8 – 10 shrimp. One skewer going through the thick section and the other through the tail. The shrimp should then lay flat.
Melt the butter in a pan. Add in the oil, garlic, and parsely. Heat until it just starts to bubble. Remove from heat and reserve some for dipping.
Setup the grill for medium-high heat. Place the skewers on the grill over the heat source. Baste the shrimp with the garlic butter sauce. Grill approximately 6 minutes per side.
Once finished place the shrimp on a platter. Heat the remaining garlic butter sauce, then add the lemon juice and barbecue sauce. Pour into a bowl for dipping.
Servings: 4-6
Here are the skewers that I use, they come handy for all sorts of grilling.
