Today we are going to show you how to make Grilled Shrimp and Potato Salad.
This is such a unique recipe as it combines two cookout favorites, potato salad, and shrimp. It’s a really simple recipe, and shrimp tastes so going when cooked on the grill.
I prefer this recipe served on salad greens, but you can also serve it by itself.

Grilled Shrimp and Potato Salad
1 1/2 lbs medium shrimp, peeled & deveined
2 lbs small red potatoes, cut into eighths
1/2 tsp salt
1/2 cup lemon juice concentrate
2/3 cup olive oil
2 tsp sugar
1/2 tsp freshly ground pepper
2 garlic cloves, pressed
2 tbsp dijon mustard
1/2 small green bell pepper, chopped
1/2 small red onion, sliced
1 (2.25-ounce) can sliced olives, drained
Salad greens
Cooking the red potatoes covered in boiling water for approximately 20 minutes or until they are tender. Drain the water and let cool. Set aside.
In a mixing bowl combine the lemon juice, olive oil, sugar, pepper, garlic, dijon mustard, and salt. Take out 2 tbsp of this vinaigrette and toss with the shrimp.
Set up your gas or charcoal grill for medium-high heat. Either using skewers or a grill basket, place the shrimp on the grill. Grill for approximately 3 – 4 minutes per side until the shrimp is opaque.
Once the shrimp is finished grilling add it along with the potato, bell pepper, onion, and olives to the remaining vinaigrette. Toss to coat.
Serve on the salad greens.
