Today we are going to show you how to make Grilled Salt and Vinegar Potatoes.
I’ve always loved salt & vinegar chips, so why not salt and vinegar potatoes, and besides grilled vegetables are great.
Sounds like an odd thing to grill up, but they are really good. The salt and vinegar with the grill potatoes just works so well.
Enjoy!
Grilled Salt and Vinegar Potatoes
2 cups white vinegar
1 lb potatoes, cut into 1/4 inch slices
2 tbsp olive oil
1 tsp sea salt, plus more for seasoning
1/4 tsp freshly ground pepper
In a medium saucepan add in the sliced potatoes. Cover with the vinegar. Bring to a boil. Once it begins to boil reduce the heat and simmer for about 5 minutes. The potatoes should be a bit tender at this point.
Allow the potatoes to cool in the vinegar for 30 minutes then drain. Toss the potatoes with the olive oil, sea salt, and pepper.
Set up your gas or charcoal grill for medium-high heat.
Place the potatoes in a grill basket for easier grilling. Grill for about 3-5 minutes per side. They will start to turn golden on each side.
Sprinkle with salt and serve.
