Today we are going to show you how to make a Grilled Prawns with Spicy Herb Butter.
Prawns are something that I don’t have often enough. They are great when the are done on the grill as you will see when you try out this recipe.
The spicy herb butter gives them a ton of flavor and a bit of zip from the use of hot sauce.

Grilled Prawns with Spicy Herb Butter
2 lbs prawns, deveined
2 medium shallots
2 sprigs tarragon
1/4 cup spinach leaves
6 scallions
2 sprigs parsley
1/4 cup toasted walnuts
2 tsp Tabasco or other hot sauce
1 tsp pastis or other anise flavored liqueur
1 tsp salt
1 cup butter
1 tbsp sea salt
2 lemons, seeded
In a food processor combine the shallots, tarragon, spinach, scallions, parsley, walnuts, hot sauce, pastis, and salt. Process the ingredients until smooth. At this point add in the butter and process again until it the mixture is smooth.
Add this mixture into a saucepan and heat over medium until it is melted.
Set up your gas or charcoal grill for direct grilling with high heat.
Grill the prawns until they are opaque in the middle. This will take approximately 3 minutes per side when grilled over high heat.
Once they are grill toss the prawns with the butter mixture in a mixing bowl.
Arrange on plates and top with the remaining butter mixture. Add a pinch of sea salt and squeeze of lemon.
Serves 6-8
