Like shimp, I love grilled prawns. They are so quick and easy to grill. When grilled on skewers, they are even quicker.
I think you will love this recipe, because we grill them with zucchini, and the prawns are wrapped with pancetta.

Grilled Prawns and Zucchini wrapped with Pancetta
16 prawns or large shrimp
8 thin slices pancetta, halved
2 medium zucchini, cut crosswise into 1/2 inch-thick slices
Olive oil
Salt and freshly ground black pepper to taste
4 Skewers
Set up your gas or charcoal grill for medium-high heat.
Clean the prawns, deveining them and removing the shell.
Wrap each of the prawns with a half slice of pancetta. Place 4 prawns crossways on each skewer, alternating with the zucchini slices.
Brush with a bit of olive oil, then season with a bit of salt and pepper.
Place the skewers on the grill. Cook for about 2 minutes per side flipping once half way through. They should be pink and firm once they are done. Serve immediately.
