Today we are going to show you how to make Grilled Pork Tenderloins with Grilled Pineapple Salsa.
This is another great pork tenderloin recipe. The addition of grilled pineapple salsa and cilantro oil really make this one so unique, and so delicious.
I think you will find yourself making the pineapple salsa again and again for other dishes as well.

Grilled Pork Tenderloins with Grilled Pineapple Salsa
2 (1 lb) pork tenderloins
6 tbsp olive oil
1 tbsp chili powder
2 tsp salt
1 tsp freshly ground black pepper
1 tsp dried oregano, crumbled
1 1/2 tbsp minced garlic
3 tbsp fresh lime juice
1 pineapple, peeled and cut crosswise into 1/2 inch slices
1/4 cup red onion, finely chopped
2 jalapeno peppers, seeded and minced
2 tbsp red bell pepper, minced
1 tbsp cilantro, finely chopped
Fresh cilantro sprigs, for garnishing

Coat the pork tenderloins with 3 tbsp of olive oil.
Mix together the chili powder, salt and pepper, garlic, and oregano. Then rub this mixture on the pork. Sprinkle the tenderloins with the lime juice. Place in the refrigerator for an hour.
Set up your gas or charcoal grill for medium-high heat.
Brush the pineapple with a bit of olive oil and place them on the grill. Grill for approximately 3 minutes per side. The pineapple should have nice grill marks at this point.
Remove the pineapple from the grill and allow it to cool. Dice the pineapple and place in a medium bowl. Add in the red onion, 2 tbsp of lime juice, 2 tbsp olive oil, jalapeno peppers, red bell pepper, chopped cilantro, and a pinch of salt. Mix well. Set aside.
Place the pork tenderloins on the grill and cook for approximately 10 minutes turning once halfway through. It should register 145F when it is done.
Remove from the grill and let it rest for about 10 minutes.
After the tenderloins have rested, slice it, and serve topped with the pineapple salsa and fresh cilantro sprigs. Drizzle with the cilantro oil as well.
Cilantro Oil:
1/4 cup fresh cilantro leaves
2 tbsp fresh mint leaves
1/2 cup olive oil
Salt and pepper
Place the herbs in a food processor. While blending slowly add in the olive oil. Add salt and pepper to taste.
