Today we are going to show you how to make Grilled Ostrich Hash.
This is a pretty interest recipe. If you’ve never had Ostrich before you will want to give this one a try. It is actually pretty easy to make, and the hash goes great with the Ostrich medallions.

Grilled Ostrich Hash
1 lb ostrich medallions
7 russet potatoes, peeled and diced
2 each red & green peppers, diced
1 yellow onion, diced
1 cup chicken stock
1 cup heavy cream
1 tbsp Fines herbes
2 tbsp bread crumbs
salt and pepper to taste
Using a large pot of salted, boiling water blanche the diced russet potatoes. Once blanched place them on a plate to cool.
Saute the peppers, onions, and potatoes over medium-high heat until the yellow onions are clear. At this point season with a bit of salt and pepper.
Using 1/2 cup of the chicken stock, de-glaze the saute pan. Continue to reduce until the chicken stock is rather thick and viscous.
Once it has thickened add in the heavy cream and the remaining chicken stock. Simmer until it has reduced by half. Once reduced add in the bread crumbs and Fines herbes. Continue to turn this hash mixture until browned.
Set up your gas or charcoal grill for medium-high heat.
Season the Ostrich medallions with a bit of salt and pepper.Place on the grill. Cook until they are medium-rare, which will be approximately 3 to 4 minutes per side.
Remove from the grill. Thinly slice the Ostrich and place on top of the hash mixture. Serve immediately.
