I’ve got a simple recipe for you today for grilled meatloaf packs. As you will see, it doesn’t get much easier than this to make a flavorful grilled meal all in one pack. You probably don’t normally think of the grill when you want to make meatloaf, but this is so good, you will want to try it out.
Grilled Meatloaf Packs Recipe
1 1/2 lbs Ground Beef
1 pk Dried Onion Soup Mix (1.oz packet)
1 Egg
3/4 cup Milk
1/2 cup Plain Bread Crumbs
1/3 cup Ketchup
1 lb Refrigerated New Potato Wedges
3 cups Baby Carrots
Heavy Duty Aluminum Foil
Set up your gas or charcoal grill for direct grilling over medium heat.
While the grill is heating prepare the grill packs. You are going to need 6 sheets of aluminum foil that are approximately 18×10. Spray one side of each of the sheets with cooking spray, or brush on some oil.
In a medium mixing bowl combine the ground beef, soup mix, egg, milk, and bread crumbs. Mix it all up really well, and then form the mixture into 6 loaves. Place one of these loafs on each of the six pieces of foil. Top each loaf with about 1 tbsp of ketchup.
Place a half cup of the potatoes and a half cup of the baby carrots around each of the loaves. Fold up all the sides of the foil and seal. Leave a bit of space for the food to expand and the heat to circulate. Place the packs on the grill over the heat and cover.
Grill for approximately 30 minutes turning each of the packs a half turn after 15 minutes. The will be done when the internal temperature of the meatloaf is 165F. Take the internal temperature with an instant read thermometer like this one.
Once they are finished remove the packs from the grill and cut a large X across the top of each and fold back the aluminum foil allowing the steam to escape. Serve and enjoy
