Today we are going to show you how to make Grilled Marinated Leg of Lamb.
Lamb is one of those things I usually only have on special occasions, but this recipe makes me want to have it more often.
The simple marinade used in this recipe really adds a lot to the lamb.

Grilled Marinated Leg of Lamb
1 (4 1/2 to 5 lb.) butterflied boneless leg of lamb
1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice
4 garlic cloves, minced
1 tbsp dried oregano
2 tsp salt
1 tsp black pepper
3-4 skewers
Using a large resealable storage bag, combine the olive oil, lemon juice garlic, oregano, salt, and pepper. After it is mixed place the lamb in the bag as well.
Seal the bag and turn several times to coat the lamb well. Place it in the refrigerator to marinate for at least 8 hours, preferably longer.
Set up your gas or charcoal grill for medium-high heat.
Remove the lamb from the marinade, and put 3 or 4 skewers through it lengthwise.
Place the lamb on the grill. Grill for approximately 10 -12 minutes, turning half way through grilling. At this point it should be medium-rare.
Once complete move the lamb to a cutting board. Allow it to rest for approximately 15 minutes, while covered with aluminum foil.
Slice and serve.
