Grilled Lemon Oregano Chicken
4 chicken breasts, boneless, skinless
1/2 tsp grated lemon peel
2 tbsp lemon juice
1 tbsp olive oil
1 tsp dried oregano
2 garlic cloves, crushed
Flatten the chicken breasts to about 1/2 inch thick using a rolling pin or kitchen hammer.
In a mixing bowl whisk together the lemon peel, lemon juice, olive oil, oregano, and garlic cloves. Pour this mixture into resealable storage bag.
Add the chicken breasts to the marinade in the storage bag, seal and refrigerate for at least 2 hours, preferably overnight.
Set up your gas or charcoal grill for medium-high heat.
Place the chicken on the grill and cook for approximately 8 minutes, turning once half way through. The internal temperature should be 165F when taken with an instant read thermometer like this one.
Remove from the grill and serve.
