Today we are going to show you how to make Grilled Lamb with Spinach and Blue Cheese.
This is such a flavorful and easy recipe. The spinach and blue cheese pair really well with the grilled lamb.
This is a great recipe in which to show off your grilling skills to your friends. As it tastes wonderful and the presentation on the plate is beautiful.

Grilled Lamb with Spinach and Blue Cheese
1 lb leg of lamb, cut into 1/2-inch cubes
4 tbsp olive oil
2 lbs fresh spinach
6 oz blue cheese, crumbled
4 tbsp balsamic vinegar
Pinch of sugar
Salt and cracked black pepper to taste
Skewers
Setup your gas or charcoal grill from direct cooking over high heat.
Season the lamb cubes with the salt and pepper, then thread them onto the skewers. Grill them over high heat for 3 to 4 minutes per side. The lamb should still be pink inside.
In a large saute pan, heat the oil until hot but not to the point of smoking. At this point add the spinach. Turn the spinach quickly back and forth with tongs being sure to coat them all with oil.
Remove the spinach from the heat and place in a bowl. Continue to mix until the spinach is bright green or wilted. Add the balsamic vinegar, sugar, and salt and pepper. Toss well.
Scoop out the spinach mixture onto 4 plates, then place the cubes of grilled lamb on top. Sprinkle with the crumbled blue cheese.
