Today we are going to show you how to make Grilled Island Chicken.
This grilled chicken recipe has a bit of a spicy zip to it as it uses some curry and red pepper. The marinade add a lot of flavor to the chicken.
As far as chicken goes, use what you like. You can use thighs, chicken breasts, drumsticks, or a combination of all of those, just be sure to adjust your grilling time.

Grilled Island Chicken
2-3 lbs chicken breasts, thighs, drumsticks or a mix
1/3 cup soy sauce
1 small onion, chopped
3 cloves garlic, minced
1 tbsp curry powder
1 tsp minced fresh ginger or 1/2 tsp ground ginger
1/4 tsp ground red pepper
In a mixing bowl combine the soy sauce, onion, garlic, curry powder, ginger, and red pepper. If the mixture is a bit too thick at a little water.
Place the chicken in a large storage bag and pour the marinade over it. Seal the bag and turn to coat. Place in the refrigerator for at least 2 hours, preferably overnight.
Set up your gas or charcoal grill for medium-high heat.
Place the chicken on the grill. Grill for approximately 15 minutes per side, flipping once halfway through. Baste with the remaining marinade throughout grilling.
Grilling time will vary depending upon the pieces of chicken you are grilling. Also keep an eye out for flare-ups and move the chicken to a cooler part of the grill if that happens. Your chicken will be done when the internal temperature is 165F when taken with an instant read thermometer like this one.
