Today I’m going to show you how to make grilled honey pecan chicken thighs. This is a quick and tasty grilled dish that can even be made on a weeknight after work. The honey and the pecans work really well together, and give the chicken a nice flavor.
Grilled Honey Pecan Chicken Thighs:
8 boneless, skinless chicken thighs
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp ground red pepper
1/2 tsp dried thyme
3/4 cup honey
3/4 cup Dijon mustard
2 garlic cloves, minced
1 cup pecans, finely chopped
1/2 tsp curry powder
In a small mixing bowl combine the salt, black pepper, red pepper, and thyme. Mix in ½ cup of the honey, and ½ cup of the
Dijon mustard. Stir in the minced garlic, and mix well. Place the chicken thighs into a baking dish, and pour the mixture over them. Cover and let them marinate in the refrigerator for at least 2 hours.
Set up your gas or charcoal grill for direct grilling over medium heat. Once the chicken is done marinating, pull the thighs out and dredge them in the chopped pecans. Place the chicken on the grill.
Grill for approximately 10 to 15 minutes per side, flipping with a pair of long tongs like these. If you start to have flare-ups or the chicken starts to burn move them to a cooler part of the grill. Your best bet to tell when the chicken is done is to use an instant read thermometer, like my favorite one here. It should read 165F in the thickest part when they are done.
Once the chicken thighs are done move them to a platter and allow them to rest a moment. At this time take the remaining ¼ cup of honey and Dijon mustard, along with the curry powder and mix together well. Serve this sauce with the chicken.
This is a simple, tasty recipe that your family will love. Also, if you want you can you regular chicken thighs with the bone and skin. It will just take a bit longer to grill.
