Grilled Ginger Lime Shrimp
12 oz pasta, any type
1 cup unsalted butter cut into chucks
2 teaspoon finely chopped shallots
18 whole Jumbo shrimp, peeled and deveined
1 pinch salt
1 pinch white pepper
3 tbsp lime juice
1 tbsp Grated fresh ginger
2 tbsp finely chopped fresh cilantro
Setup your charcoal or gas grill for direct cooking at a medium heat level.
Meanwhile bring a large pot of water to a boil. Add the pasta of your choice and cook until al dente. Pasta cooking times will differ depending upon the type, so follow the manufacturer’s suggested cooking time.
Once the pasta starts cooking, melt the butter in a large skillet over medium heat and add the shallots.
Brush the shrimp with a bit of the butter, season them lightly with the salt and white pepper. Grill the shrimp until they turn pink and opaque. They should also have a light golden color at this point. It will be approximately two minutes per side.
Add the lime juice and ginger to the melted butter and continue cooking until heated through. Season to taste with salt and white pepper.
Once the pasta is done, drain it and toss with the butter mixture. Arrange the pasta mixture and shrimp on individual plates or bowls and garnish with cilantro. Serve immediately.
