Today we are going to show you how to make Grilled Fiesta Shrimp.
Shrimp on the grill is great. It is so quick to cook up and it tastes just fabulous.
This particular recipe is a great meal. It uses corn, and black beans, as well as some fresh herbs and spices. This tastes great served over
rice.

Grilled Fiesta Shrimp
2 lbs large shrimp, peeled, deveined
1 tbsp olive oil
2 tsp Creole seasoning
1/2 cup shredded Mexican cheese
1/2 cup corn kernels
1/2 cup red bell pepper, diced
3 tbsp chopped fresh cilantro
1 can (15 ounces) black beans, rinsed, drained
Set up your gas or charcoal grill for medium heat.
Using a large piece of heavy duty aluminum foil place the shrimp in the middle. Coat the shrimp with a bit of olive oil and then sprinkle with 1 tsp of Creole seasoning.
Toss to ensure the shrimp are well coated. Add the Mexican cheese, corn, peppers, cilantro, and black beans. Finally add the remaining Creole seasoning on top.
Fold the aluminum foil so it forms a sealed packet, then place on the grill.
Grill for approximately 15 minutes, at this point the shrimp should be opaque.
Remove the grill and serve immediately.
Instead of using foil you can use a grill pan to cook everything up. These pans come in handy for grilling all sorts of foods, especially smaller grilled foods like shrimp that might fall through the grates. Here is the one I use.
