Today we are going to show you how to make a Grilled Eggplant.
I usually grow eggplant in the garden every year, and I never really know what to do with the over abundance I get. Well, eggplants are really good grilled. They grill up really fast, and are easy to make.
There are several different ways you can do eggplant on the grill, but I’m going to show you a simple recipe that is big on flavor.

Grilled Eggplant
2 large eggplants
3/4 cup extra virgin olive oil
Salt & cracked black pepper to taste
1/2 cup chopped parsley
4 tbsp capers
8 tbsp lemon juice (about 2 lemons)
Slice the eggplants into 1/2-inch-thick slices prior to grilling. Brush with a bit of the olive oil and season with the salt and cracked black pepper.
Setup your charcoal are gas grill for medium heat. Over the heat source grill the eggplant slices on one side until golden dark brown, approximately 3 to 4 minutes. Turn them with a pair of tongs like these and grill the other side in the same manner.
After they are done grilling, remove the eggplant and place on a platter that is big enough to lay them in a single layer. Pour the remaining olive oil over the slices, sprinkle them with the parsley and capers, and squeeze the lemon juice over them.
Serve immediately.
