Today we are going to show you how to make Grilled Dijon Onion Rings.
This is a really simple recipe for grilling up onions. Vegetables on the grill are wonderful, and onions are no exception. Grilling onions sweetens them up even more.
This particular recipe uses a Dijon mustard sauce to add great flavor to the onions. This one is quick and easy.

Grilled Dijon Onion Rings
2 Sweet onions, cut into 1/4 inch slices
3 tbsp Dijon mustard
1 tbsp Lemon juice
1-1/2 tsp Olive oil
1 tsp Dried thyme
1 tsp Lemon rind, cut into 1 inch julienne cut
In a small bowl mix the Dijon mustard, lemon juice, olive oil, thyme, and lemon rind. Mix well.
Brush one side of the onion slices with the some of the mustard mixture.
Set up your gas or charcoal grill for medium-high heat.
Place the onion slices on the grill mustard side down. It is best to use a grill pan or grill basket so the onions do not fall through the grate.
Grill for about 5 minutes, then baste the tops with the remaining mustard mixture. Turn the onions over and grill for another 5 minutes.
Remove from the grill and serve.
